Mrs Doyle's recipe: Chocolate Tea Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking soda

Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Cream the Butter and Sugars:
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the egg and vanilla extract, and continue to beat until well combined.
- Mix the Dry Ingredients:
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined.
- Stir in the chocolate chips and chopped nuts (if using) by hand.
- Shape the Cookies:
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Lightly flatten each cookie with the palm of your hand or the bottom of a glass.
- Bake the Cookies:
- Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Optional Dusting:
- Once the cookies are completely cooled, you can dust them lightly with powdered sugar for an extra touch of sweetness.
