Mrs Doyle's recipes: Tea-Infused Easy Cake
Ingredients:
For the Cake:
- 1 cup of milk
- 3 tea bags of Mrs Doyle's tea (your choice of tea, such as Earl Grey, green tea, or chamomile)
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons brewed Mrs Doyle's tea (reserved from the tea-infused milk)
Instructions:
- Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan or an 8x8 inch square pan.
- Infuse the Milk:
- In a small saucepan, heat the milk until it's just about to boil.
- Remove from heat and add the tea bags.
- Let them steep for 10 minutes, then remove the tea bags and let the milk cool to room temperature.
- Mix the Dry Ingredients:
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- Cream the Butter and Sugar:
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Combine Ingredients:
- Gradually add the dry ingredients to the butter mixture, alternating with the tea-infused milk. Begin and end with the dry ingredients, mixing until just combined.
- Bake the Cake:
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar and enough of the brewed tea to make a smooth, pourable glaze.
- Glaze the Cake:
- Once the cake is completely cooled, drizzle the tea glaze over the top, allowing it to run down the sides.
- Serve and Enjoy:
- Slice the cake and serve with a cup of your favorite tea.
