Mrs Doyle's recipe: Earl Grey-Infused Scones
Ingredients:
For the Scones:
- 1/2 cup milk
- 2 tablespoons loose leaf Earl Grey tea
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1 large egg
- 1 teaspoon vanilla extract
For the Glaze (optional):
- 1 cup powdered sugar
- 1-2 tablespoons brewed Earl Grey tea
- 1/2 teaspoon vanilla extract
Instructions:
- Infuse the Milk:
- Heat the milk in a small saucepan until it's just about to boil.
- Remove from heat and add the loose leaf Earl Grey tea.
- Let the tea steep for 10 minutes, then strain out the tea leaves and let the milk cool to room temperature.
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Prepare the Dry Ingredients:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the Butter:
- Add the cold, cubed butter to the dry ingredients.
- Use a pastry cutter or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.
- Combine Wet Ingredients:
- In a separate bowl, whisk together the infused milk, egg, and vanilla extract.
- Mix the Dough:
- Pour the wet ingredients into the dry ingredients.
- Stir gently with a spatula until just combined. Be careful not to overmix.
- Shape the Scones:
- Turn the dough out onto a lightly floured surface and gently knead it a few times.
- Pat the dough into a circle about 1 inch thick.
- Cut the dough into 8 wedges and place them on the prepared baking sheet.
- Bake the Scones:
- Bake for 12-15 minutes, or until the scones are lightly golden on the edges.
- Allow them to cool slightly on the baking sheet before transferring to a wire rack.
- Prepare the Glaze (Optional):
- In a small bowl, whisk together the powdered sugar, brewed Earl Grey tea, and vanilla extract until smooth.
- Drizzle the glaze over the cooled scones.
